Slow Cooker Oxtail Noodle Soup

Tender slow-cooked oxtail served with springy noodles, bok choy, and a clear aromatic broth flavored with ginger, star anise, garlic, and soy sauce. The noodles are cooked separately to keep the broth clear and prevent them from becoming mushy.

Ingredients
  

  • 3 lb (1.36 kg) oxtail, fully thawed
  • 8 cups (1.9 L) cold water
  • 1 medium yellow onion, halved
  • 3-inch piece fresh ginger, thickly sliced
  • 4 garlic cloves, lightly crushed
  • 3 whole star anise
  • 1 small cinnamon stick
  • 1 teaspoon whole black peppercorns
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon brown sugar or rock sugar
  • 1 tablespoon Shaoxing wine or dry sherry, optional
  • 12 oz (340 g) dried wheat or egg noodles
  • 4 baby bok choy, halved
  • 4 scallions, thinly sliced
  • Salt, to taste
  • Chili crisp, cilantro, rice vinegar, lime, or fresh chili, optional

Method
 

  1. Bring a large pot of water to a boil. Add the oxtail and blanch for 5 minutes.
  2. Drain the oxtail and rinse thoroughly under clean water to remove foam and loose proteins.
  3. Transfer the oxtail to the slow cooker. Add onion, ginger, garlic, star anise, cinnamon, peppercorns, soy sauce, sugar, optional Shaoxing wine, and 8 cups of water.
  4. Cover and cook on LOW for 8–9 hours, or until the oxtail is very tender. Begin checking the largest pieces after about 8 hours.
  5. Carefully remove the cooked oxtail and place it on a plate.
  6. Strain the broth through a fine-mesh strainer. Discard the cooked aromatics and whole spices, then skim excess fat from the surface.
  7. Taste the broth and add salt or a little extra soy sauce only if needed.
  8. Cook the noodles separately according to package directions. Drain well.
  9. Blanch the bok choy for 1–2 minutes until bright green and just tender.
  10. Divide the noodles among six serving bowls. Add bok choy and oxtail to each bowl.
  11. Ladle the hot oxtail broth over the noodles and meat.
  12. Garnish with sliced scallions and optional chili crisp, cilantro, rice vinegar, lime, or fresh chili. Serve immediately.

Notes

  • Best slow cooker setting: LOW gives the oxtail more time to become tender and is preferred over HIGH.
  • For clear broth: Blanch the oxtail before slow cooking and always cook the noodles separately.
  • For deeper flavor: Lightly char the onion and ginger or toast the whole spices before adding them to the slow cooker.
  • If the oxtail is tough: Continue cooking in 30-minute intervals until fork-tender.
  • For less fat: Chill the strained broth overnight and remove the hardened fat before reheating.
  • Storage: Refrigerate the broth and oxtail separately from the noodles for up to 3–4 days.
  • Freezing: Freeze the oxtail and broth without the noodles for best texture.
